3 Ingredient Holiday Almond Cookies (GF, DF, Paleo)

Modeled after Siena’s famed Ricciarelli cookies and my old boss’s recipe, “Brutti ma Buoni” (ugly but good) cookies, here’s one of my favorite cookie recipes to bring to a holiday party when you’re short on time.

Easy Peasy Almond Cookies

  1. 1 cup almond flour or almond meal + a little extra if dough is too soft
  2. 1 cup powdered sugar + 1 cup extra powdered sugar to roll cookies into before baking
  3. 1 large egg white
  4. 1 tsp almond extract (optional, but highly recommended)
  1. Preheat oven to 350 degrees
  2. In a bowl, combine almond flour and powdered sugar
  3. In a separte bowl, beat egg white to stiff peaks
  4. Pour egg white into almond flour/sugar mixture and combine well
  5. Add almond extract and blend until mixture creates a soft dough
  6. Take 1 tbsp of dough mixture and roll into ball. (do this until all of the dough has been divided into dough balls)
  7. Take the other cup of powdered sugar and pour onto a clean surface
  8. Roll the dough balls into the powdered sugar
  9. Form the dough balls into almond shapes and place on a parchment lined cookie sheet
  10. Bake for 10-15 minutes or until golden brown
  11. Cool and eat!
  1. My old boss in Italy recommends adding tiny cubes of candied orange peel or candied ginger into the dough and then dipping the cookies into melted chocolate after they're baked!
