Marinated Olive Salad

This delicious olive dish is one of my favorite recipes. It can be eaten alone, added to a side dish or on salads and in soups. I love it! It’s also a real crowd pleaser at parties and only takes a few minutes to make!

  1. 2 teaspoons whole coriander seeds
  2. 1 tablespoon whole cumin seeds
  3. 1 teaspoon dried crushed red pepper
  4. 3 garlic cloves, minced
  5. Grated orange peel from 2 oranges
  6. 1 cup extra-virgin olive oil
  7. 10 ounces assorted brine-cured green and black olives (I just go to the Whole Foods olive bar and have at it!)
  8. 2 tablespoons fresh cilantro, minced
  9. 3 tablespoons fresh basil, minced
  10. (Optional) 8 ounces feta cheese (or non-dairy cheese), cut into 1/2-inch squares
  1. Ok, you can do this one of two ways.
  2. You can (1) Combine all the ingredients in a bowl, mix and put in the fridge or...
  3. Or (2) Heat all the spices (cumin, coriander, and crushed red pepper) in heavy small skillet over medium-high heat for 1 minute.
  4. Transfer to warmed spices to a bowl.
  5. Add oil, garlic, orange peel, basil and cilantro and stir to combine.
  6. Mix in olives.
  7. Gently stir in feta or non-dairy cheese (or no cheese).
  8. Cover and refrigerate for a 2 hours or overnight.
  1. *This dish gets even better the longer it marinates! I make it 1-2 days ahead when I have the chance but it can be made up to a week in advance.
